Potato Masala for Dosa and Poori | Potato Curry | Curry for Dosa


Potato Masala - A simple flavorful curry used as a filling inside the masala dosa.  It is prepared with boiled and mashed potatoes, onions, green chillies and spices.  There are several variations to the filling used inside the dosas depending on the region, but this potato/aloo masala is the most popular among them.  It is a fantastic accompaniment for all kinds of dosas and poori too.

Prep & Cooking Time:  30 mins

Ingredients:

  • Potatoes - 3 big sized
  • Carrot - 1 medium sized, boiled and cubed
  • Peas - 1/2 cup, boiled
  • Onion - 2 medium sized
  • Ginger - 1-inch piece
  • Green chilli - 3-4, slit lengthwise
  • Turmeric powder - 1/4 tsp
  • Salt - As required

For Seasoning:

  • Oil - 1 tbsp
  • Mustard - 1/2 tsp
  • Hing/asafoetida - a pinch
  • Urad dal - 1 tsp
  • Channa dal/bengal gram - 1/2 tsp
  • Curry leaves - a few

How To Prepare Potato Masala for Dosa:
  • Cut onions lengthwise and finely chop ginger, keep aside.
  • Wash and cut potatoes into half and pressure cook for 2 whistles.  After the cooker cools, take out the potatoes, peel the skin and mash them roughly (DO NOT mash them to a fine paste), keep aside.
  • Heat oil in a kadai, add mustard seeds.  When they start to splutter, add hing, urad dal and channa dal.
  • When dal turns light brown, add curry leaves, slit green chillies, finely chopped ginger and the onions and saute them for a few minutes until onion turns translucent.
  • Now add turmeric powder, mashed potatoes, boiled carrot and peas and salt and mix well.
  • Add about 1/4 cup water and close it with a lid and cook on medium flame for about 5 minutes and remove from fire.
  • The potato masala is now ready.  Enjoy it with hot dosa or poori.

Notes:

  • The masala should be a bit thick and not watery or the dosas will become soggy.
  • Adding ginger enhances the flavor of the dish and it is good for digestion too.
