Coconut Rice is a simple and tasty traditional dish of south India. It is low on spices and is a wee bit sweet. Can be made with both fresh and dried coconut, but tastewise fresh coconut is any day better.
There are many variations to preparing coconut rice. My version is to make the rice separately and then add the coconut mixture to it and mix it well. It tastes awesome and is one of those quick-to-prepare recipes that can be made when you are short on time. So here goes..
Ingredients:
- Rice - 1 cup
- Coconut - 1 cup
- Urad dal/black gram dal - 1 tsp
- Bengal gram dal - 1 tsp
- Red chillies - 1
- Green chillies - 5 or 6.
- Salt - As required
- Curry Leaves - A few
- Oil - 1 tbl spn
- Cook rice and allow it to cool.
- Grate the coconut and keep aside. Cut each one of those green chillies into half.
- Heat oil in kadai and add mustard seeds. Once the seeds start spluttering add all the ingredients - curry leaves, broken red chillies, green chillies, bengal gram dal, urad dal in that order - and fry for a minute or two till the dal turns brown.
- Add the grated coconut and salt and fry for another minute or two.
- Switch off and add to the rice and mix well.
- Coconut rice is ready to serve.
- Serve with any gravy of your choice or even papad/chips.
