- Baby potatoes: 500 grams
- Tomatoes: 2 medium, chopped
- Ginger: 2 inch piece grated
- Cumin seeds: 1/2 tsp
- Dry red chillies: 2
- Bay leaves: 2
- Turmeric powder: 1/2 tsp
- Red chilli powder: 1 tsp
- Cumin/Jeera powder: 1 tsp
- Garam Masala Powder: 1/4 tsp
- Mustard oil: 3 tablespoons
- Salt: As per taste
- Sugar: 1/2 tsp
How To Prepare Aloo Dum the Bengali Way:
- Wash and boil potatoes. Cool and peel them.
- In a bowl mix together the grated ginger, cumin powder, and red chilli powder with a little water and keep aside.
- Heat mustard oil in a pan to smoking point. Switch off, cool it and heat again.
- Add the potatoes and fry them to a golden brown and remove them on to a bowl.
- In the same oil, add cumin seeds, red chillies, bay leaves and fry till the cumin seeds splutter and change color. Add the tomatoes and saute till they become soft and mushy.
- Add turmeric and the ginger mixed with the spice powders and saute for a couple of minutes till good smells comes.
- Add potatoes and mix well and add a little water (but not too much as the potatoes are already boiled). Cover with a lid and cook for a few minutes.
- We normally prefer the drier version, so I do not retain much gravy.
- Add garam masala powder 2 minutes before switching off.
- Serve hot with rotis, parathas or luchi/puris.
